Maybe the clean uninstall with the tool did something, I'm guessing. Checked Update Option for installed apps So far so good, after a couple of restarts no unwanted apps pop up on my PC.

Update the Tile name, URL, Description, or Image URL for the custom tile (For steps, see Add a custom tile to Apps). and I can still open them and am still logged in. On the Organization profile page, go to Custom tiles for Apps, select the three dots next to your Custom tile, and select Edit custom tile. I have uninstalled the office 365 in programs but I still have word, outlook, excel, etc.
Choose the Microsoft Office program you want to uninstall, and then select Uninstall. (The left-side search illustration below is in Windows 11, and the right-side is Windows 10.) In the Programs field, select Uninstall a program. In the admin center, go to the Settings > Org Settings > Organization profile tab. Type and search Control Panel in the Windows search bar, and then click Open. These steps are required for custom tiles in Microsoft 365. If you don't see the custom tile created in the previous steps, make sure you have an Exchange Online mailbox assigned to you and you've signed into your mailbox at least once.
